Wild Shrimp and Organic Vegetable Pasta
If you aren't in a hurry then maybe this dinner isn't for you. Just kidding....it for everyone
But if your kids or spouse is driving you nuts with the " I am hungry, what's for dinner, when is dinner? mom...mom....mom!" whinny-ness then this might work well to cure them of their issues.
For those of us who need dinner ready in under 20 minutes, need it to healthy and need to pack it with veggies.... this is a go to in my house.
Through everything together in the pan while your noodles boil ( multi tasking) and tah-dah! Dinner is served...
Besides being super delicious, it's also healthy, full or protein and vegetables and can be customized easily with gluten free pasta or a different protein. For a dairy free version don't use the parm cheese!
I like to use wild shrimp because them see to have had more fun the regular shrimp....just kidding! I just like my food to be as organic and wild as it can be and if I can find easy and affordable options to make that happen then I am all in!
The most expensive part of this dish was the olive oil because I am becoming an olive oil snob. I want the good stuff! However, I am going to use it in many, many more dishes, so getting a good quality olive oil is like gold to me.
All of the organic can be substituted with non- organic....but you loose quality, and all that organic-ness....just sayin....
Here is what you need!
1 box Organic Penne Pasta
2 lbs of Wild Shrimp ( thawed, or put them in warm water for about 10 minutes)
1 Head of Organic Broccoli
1 lbs of fresh Organic Green Beans
1 cup of good quality Olive Oil ( this recipe calls for a lot of olive oil, the better the quality the better the taste! )
2 pieces of Garlic minced
Fresh Organic Basil
1/2 pint of Organic Cherry Tomatoes
1 TSP of Ground Black Pepper
1 TSP of Red Pepper Flakes
Salt to taste
Dress with fresh grated Parmesan cheese
Okay, Here's what I did:
Boil water, salt and some olive oil in a pot. Once it reaches boiling add penne pasta. Cook for about 8-10 minutes until pasta is al dente.
While that boils..
Heat 1/2 cup of olive oil in pan and add in minced garlic- cook on low so the garlic doesn't burn. We just want the release of flavor into the oil.
Trim your broccoli and green beans and add them to your pan.
Peel shrimp ( if it has it shell) and I like to cut them into chunks for easier eating....your kids will appreciate this too.
I scooch the veggies over to one side of the pot when I put the shrimp in. I will add a smidgen more olive oil to the open side of the pan and drop my shrimp in.
let them turn pink for about 3 minutes. Then you can stir all the veggies and shrimp together.
Drain the pasta but reserve about 1/2 cup of salty cooking water and add that to your main pan with the shrimp and veggies. Then add your cooked pasta to the party too!
Give everything a nice stir and shift in the pan.
I will half my cherry tomatoes at this point and then add them at the end.
Sprinkle with ground black pepper, the rest of your olive oil, fresh cut basil, parm cheese and red pepper flakes.
Feed to your starving family and they will leave you alone!
